Mango with Ginger Yoghurt

Instructions

Cut the mango into cubes by slicing off each side, score the flesh into squares and then turn out each side, cutting off the cubes with a sharp knife. Divide the mango between two glasses then top each with a couple of spoons of natural yoghurt. Crush two ginger biscuits in a freezer bag then sprinkle on top of the yoghurt.

Mangoes are rich in beta-carotene, which can help protect the skin. Research has shown a good intake of beta-carotene could help reduce incidences of some skin cancers.

  • 4 tbsp natural yoghurt
  • ginger biscuits
