Beef and Spinach Spaghetti


Cook the spaghetti according the instructions on the packet. Fry the beef in the oil for a few minutes, less if pre cooked. Add the mange tout and baby sweetcorn and fry for about 3 minutes. Mix together with the sauce, water chestnuts and pasta. Warm through and serve. 

This is a great post workout meal. The pasta is a good source of carbohydrate to refuel tired muscles and the beef provides zinc and iron needed for a healthy immune system. Strenuous exercise can actually reduce your immunity for up to 48 hours.



Serves 2

  • 150g spaghetti
  • 250g chopped sirloin beef or left over beef from roast
  • 1 packet of mange tout and baby sweetcorn
  • 1tbsp olive oil
  • sliced water chestnuts, about half a small tin
  • 1 sachet thai sauce
