Chicken and Vegetable Kebabs

Chicken Kebabs


Cut up the chicken, peppers, onion, courgettes and mushrooms into slices or chunks (not too small). Place them in a dish with the tomatoes.

To make the marinade, add all the ingredients together. Shake well in a screw-top jar. Cover the chicken and vegetables with the marinade and leave for 1-2 hours. Thread the chicken and vegetable onto bamboo sticks and either barbecue or grill for about 10 minutes, turning frequently.

For vegetarians you can omit the chicken and serve with nutty rice. If you are short on time, leave the water out of the marinade and brush it directly onto the kebabs.



Makes about 8 kebabs

  • 2 large chicken breasts
  • 1 red pepper
  • 1 yellow pepper
  • 1 red onion
  • 2 courgettes
  • 8 small mushrooms
  • 16 cherry tomatoes


  • 4 tbsp olive oil
  • 3 tbsp water (optional)
  • 1 tbsp soy sauce
  • 3 tsp clear honey (squeezy honey jar is easiest)
  • 1 crushed clove of garlic
  • zest and juice of 1 lime
  • 1 tsp of freshly grated ginger (freeze the ginger in foil for future use!)
