Lemon Chicken


Grill the chicken whilst preparing all the other ingredients. Boil the pasta until al dente. Drain the pasta leaving a little of the water still in the pan to help mix in the ricotta. Add the chopped chicken, lemon juice, watercress, parsley and black pepper. Mix well. Serve into bowls adding a little lemon rind and parsley to garnish.

Parsley and watercress are both good sources of iron and the lemon juice provides extra vitamin C which is needed to help absorb the iron.

  • 150g wholewheat spaghetti
  • 2 tbsp ricotta
  • 2 chicken breasts (grilled and chopped up)
  • a handful of torn watercress
  • 1/2 lemon, rind and juice
  • freshly ground black pepper
  • 2 tbsp finely chopped fresh parsley
