Nutty Rice

Instructions

Cook the rice according to instructions on the packet, normally about 30 minutes. Chop the onions and garlic, then fry for a few minutes until soft. Add the almonds and pine nuts and cook until a golden colour, (stir often to prevent burning). Combine the onion mixture, rice, apricots, parsley and lemon juice, then transfer to a serving dish.

I have often cooked this meal with vegetable kebabs for vegetarian friends who have loved it.

Ingredients
  • 200g brown rice
  • dash olive oil
  • 1 red onion
  • 3 cloves garlic
  • 50 g flaked almonds
  • 50g pine nuts
  • juice of half a lemon
  • handful chopped dried apricots
  • fresh chopped parsley
