Salmon and Noodles


Mix together the soy sauce, sugar, garlic, ginger, water and half the oil in a screw top jar. Place a large square of foil on the grill pan and fold up the edges. Put the salmon on the foil and make about 6 small cuts across the fillets, only about 1cm deep. Brush half the marinade over the salmon. Cook the salmon under a low grill checking every couple of minutes and brushing with more marinade as required. Cook the noodles according to the instructions on the packet, (normally 3 minutes). 

Fry the chopped spring onions and sesame seeds in the remaining oil for about 2 minutes. Add the drained noodles and any remaining marinade and heat through. Sprinkle in some chopped parsley or coriander. Warm two plates and serve the salmon on top of the noodles immediately, before the noodles cool.

Salmon is my favourite oily fish. It is a great source of healthy fats and vitamin D, which in the middle of winter you may be short of with little exposure to the sun.

  • 2 salmon fillets
  • 1 tbsp soy sauce
  • 1 tbsp soft brown sugar
  • 2 garlic cloves crushed
  • 1 tsp fresh ginger grated
  • 1 tbsp sesame oil
  • 1 tbsp water
  • 1 tbsp sesame seeds
  • 4 spring onions chopped
  • 150g rice noodles
  • fresh parsley or coriander chopped
