Vegetarian Chilli

Mixed bean chilli


Soften the chopped onions in a dash of olive oil, then add the garlic, paprika and puree and cook for about 2 minutes. Add the contents of the tins and the vegetables, cutting the tomatoes into smaller chunks in the pan. Bring to the boil then simmer for about 15 minutes or until the vegetables are tender. You can add some vegetable stock to make more of a sauce if you like, but may then need to add a little cornflour to thicken the sauce.

Kidney beans and cannelini beans are far healthier than baked beans, which contain added sugar and salt. My one year old son loves these beans! I usually make a large batch then freeze several portions for quick meals later.

  • 1 red onion
  • 1 white onion
  • 3 cloves of garlic
  • 1 tbsp tomato puree
  • 2 tsp smoked paprika
  • pinch chilli powder
  • 1 large courgette
  • 1 red pepper
  • 1 yellow pepper
  • 2 large carrots
  • 1 tin plum tomatoes
  • 1 tin cannelini beans
  • 1 tin kidney beans
