Healthy chips with homemade tomato sauce

Cut the parsnips and sweet potato into chunky chips, roast in a little olive oil for 20-30 minutes. Finely chop the onion and lightly fry in a saucepan. Then add a can of tomatoes, a peeled chopped apple, a pinch of mixed spice and two teaspoons of brown sugar. Simmer for around 20 minutes then using a hand blender, blend until smooth.

These are an ideal snack for two in front of the TV for finger licking fun. Just say no to all the saturated fat from your local chippy! The sauce also goes really well with smoked gammon.

  • 2 large parsnips
  • 1 large sweet potato
  • 1 small onion
  • can of tomatoes
  • 1 apple
  • pinch of mixed spice
  • 2 tsp brown sugar
