Salsa bowl


Chop up the plum tomatoes and add all the other ingredients in a mixing bowl, then transfer to a serving bowl, storing any excess in a plastic container. Place in the fridge until required.

I find using a good quality can of plum tomatoes tastes better than chopped. Lycopene gives tomatoes their strong red colour and is a disease fighting antioxidant.

  • 1 can plum tomatoes
  • half small onion finely chopped
  • 1 garlic clove crushed
  • half green pepper finely chopped
  • 1 tsp chilli powder or fresh chilli to taste
  • 1 tbsp tomato puree
  • 1 tbsp olive oil
  • 1 tbsp lemon or lime juice
  • fresh herbs to taste
